a、柠檬果汁的制备:首先将分拣出来的柠檬果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到柠檬果汁;
b、取a步骤所得的柠檬果汁1份与1份浓度为6%的白砂糖糖液混合,接入占所述柠檬果汁与白砂糖糖液混合重量的0.05%的酿酒干酵母进行酒精发酵,发酵时间为8天-12天,得到酒精含量为3.0-4.0%vol的果酒;
c、用醋酸菌接入10%的步骤b所得的果酒发酵制备醋酸母液,醋酸菌的重量为果酒重量的0.05%,发酵温度为33℃-36℃,发酵时间为5天-7天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后的醋酸母液的酸度,当酸度≥4.0 g/ 100ml时,停止充气,终止发酵,得到醋酸母液;
d、将剩下的90%的果酒与c步骤所得的醋酸母液混合在一起发酵,发酵温度为33℃-36℃,发酵时间为3天-5天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后果酒混合液的酸度,当酸度≥5.0g/100ml时,停止充气,终止发酵,得到柠檬果醋初品;
e、将所得的柠檬果醋初品在103℃~107℃温度下灭菌处理15秒以上,然后密闭贮存7天以上,即得柠檬果醋;
B、橙汁的制备:首先将分拣出来的甜橙果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到橙汁;
C、罗汉果液的制备:取罗汉果干品1份,纯净水20份,分3次沸水浸提,每次浸提20分钟,将3次浸提得到的液体混合后过滤,得到罗汉果液;
D、枸杞子液的制备:取枸杞子干品1份,纯净水10份,分3次沸水浸提,每次浸提20分钟,将3次浸提得到的液体混合后过滤,得到枸杞子液;
E、取所述柠檬果醋6份-12份,加入所述柠檬汁4份-8份、橙汁10-20份、罗汉果液4份-8份、枸杞子液10-20份、纯净水66-132份份混合均匀,用硅藻土过滤机过滤,得到果醋饮料初品,果醋饮料总酸为0.45-0.55%;
F、将E步骤所得的果醋饮料初品在113-115℃温度下灭菌处理15秒以上,然后迅速降温至90-92℃进行热灌装,再倒瓶、喷淋冷却、风干后包装即得到果醋饮料成品。
本发明所述的甜橙含有大量的糖和一定量的柠檬酸以及丰富的维生素C,营养价值较高,果实还含维生素P,具有极高食用价值。
本发明所述的罗汉果,甘、酸,性凉,有清热凉血、生津止咳、滑肠排毒、嫩肤益颜、润肺化痰等功效,可用于益寿延年、驻颜悦色及治疗痰热咳嗽、咽喉肿痛、大便秘结、消渴烦躁诸症,现代医药学研究发现,罗汉果含有丰富的糖甙,这种糖甙的甜度是蔗糖甜度的300倍,具有降血糖作用,可以用来辅助治疗糖尿病;含丰富的维生素C,有抗衰老、抗癌及益肤美容作用;有降血脂及减肥作用,可辅助治疗高脂血症,改善肥胖者的形象。
本发明所述的枸杞甘,平,归肝、肾经;枸杞具有补肝肾、益精气、长肌肉、改善面色、明目安神、祛风治虚、延年益寿、坚筋骨之功效。枸杞子含有丰富的枸杞多糖、脂肪、蛋白质、游离氨基酸、牛磺酸、甜菜碱、维生素 B1、B2、E、C,特别是类胡萝卜素含量很高。此外,还含有大量的矿物元素,如钾、钠、钙、镁、铁、铜、锰、锌、硒等营养成分。对肝肾阴亏、血虚萎黄、、虚痨精亏、腰膝酸软、头晕目眩等症有显著效果。用于肝肾虚损,精血不足,腰膝酸软,头昏耳鸣,遗精,不孕;肾虚精亏,消渴口干,尿频舌红;精血不能上济于目,眼目昏花,视力减退。
由于采用了上述技术方案,本发明具有如下有益效果:
以柠檬为原料采用酵母和醋酸菌种发酵、辅以甜橙、罗汉果、枸杞子制作的果醋饮料,清亮透明,自然色泽,果香明显,酸甜适口,风味独特,低热值,含多种维生素,营养价值高。
具体实施方式
下面结合具体实例对本发明作进一步详述:
实施例1——制备100升的果醋饮料
其方法包括如下步骤:
柠檬果醋的制备:
a、柠檬果汁的制备:首先将分拣出来的柠檬果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到柠檬果汁;
b、取a步骤所得的柠檬果汁1份与1份浓度为6%的白砂糖糖液混合,接入占所述柠檬果汁与白砂糖糖液混合重量的0.05%的酿酒干酵母进行酒精发酵,发酵时间为8天,得到酒精含量为3.0vol的果酒;
c、用醋酸菌接入10%的步骤b所得的果酒发酵制备醋酸母液,醋酸菌的重量为果酒重量的0.05%,发酵温度为33℃-36℃,发酵时间为5天-7天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后的醋酸母液的酸度,当酸度≥4.0 g/ 100ml时,停止充气,终止发酵,得到醋酸母液;
d、将剩下的90%的果酒与c步骤所得的醋酸母液混合在一起发酵,发酵温度为33℃-36℃,发酵时间为3天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后果酒混合液的酸度,当酸度≥5.0g/100ml时,停止充气,终止发酵,得到柠檬果醋初品;
e、将所得的柠檬果醋初品在103℃~107℃温度下灭菌处理15秒以上,然后密闭贮存7天以上,即得柠檬果醋;
B、橙汁的制备:首先将分拣出来的甜橙果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到橙汁;
C、罗汉果液的制备:取罗汉果干品1份,纯净水20份,分3次沸水浸提,每次浸提20分钟,将3次浸提得到的液体混合后过滤,得到罗汉果液;
D、枸杞子液的制备:取枸杞子干品1份,纯净水10份,分3次沸水浸提,每次浸提20分钟,将3次浸提得到的液体混合后过滤,得到枸杞子液;
E、调配:取用上述技术方案制得的柠檬醋6升、柠檬汁4升、橙汁10升、罗汉果液4升、枸杞子液10升、纯净水66升,得到混合液100升, 果醋饮料总酸以乙酸计为0.45-0.55%;
F、过滤:用硅藻土过滤至滤液清亮透明,无肉眼可见物为止,得到滤液92升;
G、灭菌:采用高温瞬时灭菌工艺,在113-115℃温度下灭菌处理15秒以上;
H、灌装:采用热灌装工艺,将经高温瞬时灭菌的物料在管道内迅速降温至90-92℃时进行热灌装,灌装温度应控制90℃以上;
I、包装:倒瓶1分钟,喷淋冷却至35℃经风干后包装得到果醋饮料成品。
实施例2——制备200升的果醋饮料
其方法包括如下步骤:
柠檬果醋的制备:
a、柠檬果汁的制备:首先将分拣出来的柠檬果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到柠檬果汁;
b、取a步骤所得的柠檬果汁1份与1份浓度为6%的白砂糖糖液混合,接入占所述柠檬果汁与白砂糖糖液混合重量的0.05%的酿酒干酵母进行酒精发酵,发酵时间为12天,得到酒精含量为3.0vol的果酒;
c、用醋酸菌接入10%的步骤b所得的果酒发酵制备醋酸母液,醋酸菌的重量为果酒重量的0.05%,发酵温度为33℃-36℃,发酵时间为7天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后的醋酸母液的酸度,当酸度≥4.0 g/ 100ml时,停止充气,终止发酵,得到醋酸母液;
d、将剩下的90%的果酒与c步骤所得的醋酸母液混合在一起发酵,发酵温度为33℃-36℃,发酵时间为5天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后果酒混合液的酸度,当酸度≥5.0g/100ml时,停止充气,终止发酵,得到柠檬果醋初品;
e、将所得的柠檬果醋初品在103℃~107℃温度下灭菌处理15秒以上,然后密闭贮存7天以上,即得柠檬果醋;
B、橙汁的制备:首先将分拣出来的甜橙果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到橙汁;
C、罗汉果液的制备:取罗汉果干品1份,纯净水20份,分3次沸水浸提,每次浸提20分钟,将3次浸提得到的液体混合后过滤,得到罗汉果液;
D、枸杞子液的制备:取枸杞子干品1份,纯净水10份,分3次沸水浸提,每次浸提20分钟,将3次浸提得到的液体混合后过滤,得到枸杞子液;
E、调配:取用上述技术方案制得的柠檬醋12升、柠檬汁8升、橙汁20升、罗汉果液8升、枸杞子液20升、纯净水132升,得到混合液200升, 果醋饮料总酸以乙酸计为0.45-0.55%;
F、过滤:用硅藻土过滤至滤液清亮透明,无肉眼可见物为止,得到滤液184升;
G、灭菌:采用高温瞬时灭菌工艺,在113-115℃温度下灭菌处理15秒以上;
H、灌装:采用热灌装工艺,将经高温瞬时灭菌的物料在管道内迅速降温至90-92℃时进行热灌装,灌装温度应控制90℃以上;
I、包装:倒瓶1分钟,喷淋冷却至35℃经风干后包装得到果醋饮料成品。
Claims (1)
1.一种果醋饮料的制作方法,其特征在于其方法包括如下步骤:
A、柠檬果醋的制备:
a、柠檬果汁的制备:首先将分拣出来的柠檬果进行清洗,然后压榨,将压榨出来的汁再进行过滤,即得到柠檬果汁;
b、取a步骤所得的柠檬果汁1份与1份浓度为6%的白砂糖糖液混合,接入占所述柠檬果汁与白砂糖糖液混合重量的0.05%的酿酒干酵母进行酒精发酵,发酵时间为8天-12天,得到酒精含量为3.0-4.0%vol的果酒;
c、用醋酸菌接入10%的步骤b所得的果酒发酵制备醋酸母液,醋酸菌的重量为果酒重量的0.05%,发酵温度为33℃-36℃,发酵时间为5天-7天,发酵时的进气量为8.7~10.5 m3/T·hr,检测发酵后的醋酸母液的酸度,当酸度≥4.0 g/ 100ml时,停止充气,终止发酵,得到醋酸母液;
