背景技术
鸡汤作为中华民族的传统美食,不仅香味浓郁,口感鲜香,其保健功能也不可小觑,早在八百年前就有“鸡汤治感冒”一说,而现代科学家在研究了各种汤品,分析了各种调和剂后,最终得出了对于感冒而言,鸡汤确实有效的观点。鸡汤可抗感冒,增加人体的免疫功能,补气养血。特别是老母鸡汤中的特殊养分,可加快咽喉部及支气管膜的血液循环,增强粘液分泌,及时清除呼吸道病毒,缓解咳嗽、咽干、喉痛等症状。
《黄帝内经》中也指出:“气血失和,百病乃变化而生”,中医认为人体健康有一个重要的标准,那就是气血充盈而调和。气血充足,并能够良性互动,人就会健康,精力旺盛,气色也好。
核桃,又称胡桃,为胡桃科植物。核桃仁含有丰富的营养素,每百克含蛋白质15~20克,脂肪60~70克,碳水化合物10克;并含有人体必需的钙、磷、铁等多种微量元素和矿物质,以及胡萝卜素、核黄素等多种维生素。核桃中所含脂肪的主要成分是亚油酸甘油脂,食后不但不会使胆固醇升高,还能减少肠道对胆固醇的吸收,因此,可作为高血压、动脉硬化患者的滋补品。此外,这些油脂还可供给大脑基质的需要。核桃中所含的微量元素锌和锰是脑垂体的重要成分,常食有益于脑的营养补充,有健脑益智作用。

因此,为了满足人们日常生活对于养生食物的需求,生产一种食用方便,味道鲜美、营养丰富的鸡汤是现有技术的空白。
发明内容
本发明的目的是针对上述现有技术的缺陷,提供了一种核桃鸡汤及其制备方法,其采用现代熬制工艺和技术,使鸡汤中浸出丰富的氨基酸、维生素及钙质,不仅起到健脾和胃,补气补血,消食导致之功效,而且补充老年人营养物质及钙质的吸收,达到延年益寿的目的。
本发明的目的可以通过以下技术方案实现:
一种核桃鸡汤,该核桃鸡汤是由以下重量比的原料制成:鸡:1000g~1500g,黄氏:5g~15g,黄精:2.5g~5g,西洋参:3g~6g,枸杞:5g~10g,葱:30g~50g,姜片:30g~60g,八角:0.5g~1.2g,盐:15g~40g,核桃仁:8g~15g。
作为本发明的进一步改进,该核桃鸡汤是由下列重量比的原料制成:鸡:1000g,黄氏:5g,黄精:2.5,西洋参:3g,枸杞:5g,葱:30g,姜片:30g,八角:0.5g,盐:20g,核桃仁:8g。
本发明的另外一个目的还在于提供一种核桃鸡汤的制备方法,包括以下步骤:
(1)按上述比例配置的黄氏、黄精、西洋参和枸杞洗净后制成辅料包备用;
(2)预处理:将选用的健康成年鸡宰杀、褪毛、净膛、飞水后备用;
(3)煮制:将预处理好的鸡和辅料包放入罐中,用大火煮开,微沸保持2小时,充分提取营养物质和风味物质,其中煮沸1小时加入上述比例配制的葱、姜片、核桃仁和八角,结束半小时前加入上述比例配置的盐;
(4)取料:取出配料包和鸡,过滤完杂质后,并对鸡汤进行冷却;
(5)包装:可采取两种形式的包装,一种为软包装或金属罐头灌装;一种为利用砂锅灌装并密封。
(6)杀菌:采用110℃/30分钟的水杀菌方式,杀菌后快速冷却至常温。

黄芪为补药之长,主要是补气,中医讲气与血有个辨证关系,气为血之帅,血为气之母,黄芪配过之后,再配以黄精,不仅起到了补气补血的作用,而且还可以起到补气养阴,健脾,润肺之功能。

选黄氏10g、黄精3g、西洋参3.5g和枸杞6.5g洗净后制成辅料包备用;然后选用的健康土鸡宰杀、褪毛、净膛、飞水后备用;随后将预处理好的土鸡1000g和辅料包放入罐中,加入纯净水2000g,用大火煮开,微沸保持2小时,充分提取营养物质和风味物质,其中煮沸1小时加入葱40g、姜片40g、八角0.8g和核桃仁12g,结束半小时前加入盐25g;然后取出配料包和土鸡,过滤完杂质后,并对鸡汤进行冷却;可采取两种形式的包装,一种为软包装或金属罐头灌装;一种为利用砂锅灌装并密封;采用110℃/30分钟的水杀菌方式,杀菌后快速冷却至常温。将杀菌后的罐装核桃鸡汤装箱,检验合格后制成本发明所述核桃鸡汤。

1.一种核桃鸡汤,其特征在于:该核桃鸡汤是由以下重量比的原料制成:鸡:1000g~1500g,黄氏:5g~15g,黄精:2.5g~5g,西洋参:3g~6g,枸杞:5g~10g,葱:30g~50g,姜片:30g~60g,八角:0.5g~1.2g,盐:15g~40g,核桃仁:8g~15g。
2.根据权利要求1所述的一种核桃鸡汤,其特征在于:该核桃鸡汤是由下列重量比的原料制成:鸡:1000g,黄氏:5g,黄精:2.5,西洋参:3g,枸杞:5g,葱:30g,姜片:30g,八角:0.5g,盐:20g,核桃仁:8g。
3.根据权利要求1所述的一种核桃鸡汤的制备方法,其特征在于:该核桃鸡汤的制备方法包括以下步骤:
(1)按上述比例配置的黄氏、黄精、西洋参和枸杞洗净后制成辅料包备用;
(2)预处理:将选用的健康成年鸡宰杀、褪毛、净膛、飞水后备用;
(3)煮制:将预处理好的鸡和辅料包放入罐中,用大火煮开,微沸保持2小时,充分提取营养物质和风味物质,其中煮沸1小时加入上述比例配制的葱、姜片、核桃仁和八角,结束半小时前加入上述比例配置的盐;
(4)取料:取出配料包和鸡,过滤完杂质后,并对鸡汤进行冷却;
(5)包装:可采取两种形式的包装,一种为软包装或金属罐头灌装;一种为利用砂锅灌装并密封。
(6)杀菌:采用110℃/30分钟的水杀菌方式,杀菌后快速冷却至常温。
4.根据权利要求1~3任一所述的一种核桃鸡汤及其制备方法,其特征在于:所述核桃仁采用山核桃仁。
