Description
Mittel zum Züchten von Milchsäurebakterien Die vorliegende Erfindung bezieht sich auf ein Mittel zum Züchten von Milchsäurebakterien sowie auf die Verwendung des Mittels zur Herstellung von Sauermilchprodukten.
Um Sauermilch (Dickmilch), namentlich im Win ter, rascher zur Entwicklung zu bringen, wird erfin- dungsgemäss ein mit einer Aufhängevorrichtung ver sehener Fermentträger verwendet, der durch mehrere im Querschnitt kreuz- oder sternförmig gegeneinander angeordnete, und' längs je einer ihrer Schmalseiten zusammenhängende Platten gebildet ist, die aus kor rosionsbeständigem Material bestehen und eine un ebene Oberfläche aufweisen.
Zur Herstellung von Sauermilchprodukten wird der erfindungsgemässe Fermentträger mittels der Auf hängevorrichtung aus einer fermentierten Milch her ausgehoben und, in eine andere, noch zu fermentie rende Milch eingesetzt.
In der Zeichnung ist eine beispielsweise Aus führungsform des Erfindungsgegenstandes dargestellt. In dem dargestellten Beispiel bezeichnet 1 ein Gefäss zur Aufnahme der zu fermentierenden bzw. fermentierten Milch. Das Gefäss 1 ist mittels einer als Deckel dienenden Korkscheibe 2 abschliessbar. In der Mitte der Korkscheibe 2 ist ein Faden 3 verankert, an dem der Fermentträger hängt. Dieser besteht im dargestellten Beispiel aus vier kreuz förmig gegeneinander angeordneten dünnen Plat ten 4 bis 7, die längs je einer ihrer Schmalseiten 8 zusammenhängen. Die Platten 4 bis 7 sind aus korrosionsbeständigem Material hergestellt und mit einer unebenen, im dargestellten Beispiel gerillten Oberfläche versehen.
Diese Rillen vermitteln dem Ferment einen guten Halt und dienen ausserdem zur Oberflächenvergrösserung der Platten. Zu dem glei chen Zweck könnte man die Platten mit einer auf gerauhten Oberfläche versehen. Zur Herstellung von Sauermilchprodukten wird der Fermentträger 4 bis 7 mittels der Aufhängevor richtung 2, 3 aus dem mit fermentierter Milch gefüll- ten Gefäss 1 herausgehoben und in ein anderes Ge fäss mit noch unfermentierter Milch eingesetzt.
Wählt man Reinkulturen von Dickmilch, so kann die Reinheit in pasteurisierter oder auch anders sterilisierter Milch bedeutend länger von übertra- gung zu Übertragung erhalten bleiben als beispiels weise beim Ausgiessen von roher oder sterilisierter Milch in breit offenstehende Schalen, die man der freien Luft zur Fermentierung überlässt.
Namentlich aber kann man im Winter von Tag zu Tag Dick milch, Buttermilch oder andere Kaltmilcharten, die nicht durch Thermobakterien erzeugt werden, in geheizten Zimmern fortzüchten.
Die als Fermentträger dienenden Platten können in Abweichung von dem gezeichneten Beispiel, statt kreuzweise, auch sternförmig angeordnet werden. Die sehr grosse und durch die Unebenheiten noch zusätzlich vergrösserte Oberfläche des beschriebenen Fermentträgers ermöglicht eine ungehinderte Ver mehrung der zur Fermentierung dienenden Milch- säure-Mikroorganismen.

In order to develop sour milk (thick milk) more quickly, especially in winter, a fermentation carrier provided with a suspension device is used according to the invention, which is arranged in cross-section in a cross or star shape against one another and connected along one of its narrow sides Plates are formed which are made of corrosion-resistant material and have an uneven surface.
For the production of sour milk products, the fermentation carrier according to the invention is lifted out of a fermented milk by means of the suspension device and inserted into another milk still to be fermented.
In the drawing, an example from implementation of the subject invention is shown. In the example shown, 1 denotes a vessel for receiving the milk to be fermented or fermented. The vessel 1 can be closed by means of a cork disc 2 serving as a lid. In the middle of the cork disc 2, a thread 3 is anchored to which the ferment carrier hangs. In the example shown, this consists of four thin plates 4 to 7 which are arranged in a cross shape against one another and which are connected along one of their narrow sides 8. The plates 4 to 7 are made of corrosion-resistant material and provided with an uneven surface, grooved in the example shown.
These grooves give the ferment a good hold and also serve to enlarge the surface of the plates. For the same purpose one could provide the plates with a roughened surface. For the production of sour milk products, the fermentation carrier 4 to 7 is lifted out of the vessel 1 filled with fermented milk by means of the suspension device 2, 3 and inserted into another vessel with still unfermented milk.
If you choose pure cultures of curdled milk, the purity in pasteurized or otherwise sterilized milk can be maintained significantly longer from transfer to transfer than, for example, when pouring raw or sterilized milk into wide open bowls that are left in the open air for fermentation .
In particular, thick milk, buttermilk or other types of cold milk that are not produced by thermal bacteria can be grown in heated rooms from day to day in winter.
The plates serving as fermentation carriers can, in deviation from the example shown, also be arranged in a star shape instead of crosswise. The very large surface of the fermentation carrier described, which is also enlarged due to the unevenness, enables the lactic acid microorganisms used for fermentation to multiply without hindrance.
