"PROCESSO DE OXIDAçãO DE AMIDO, AMIDO OXIDADO, E, USO DO MESMO". A invenção refere-se a um processo de oxidação de um amido, em que um amido de raiz ou tubérculo, que compreende pelo menos 95%, em peso, com base na substância seca do amido de amilopectina, ou um derivado da mesma, é tratado com peróxido de hidrogênio, na presença de um catalisador, cujo catalisador compreende íons de cobre divalentes.
