Abstract

"MéTODO E DISPOSITIVO PARA A CRIAçãO DE CORDõES DE SALSICHAS CO-EXTRUDADOS" Uma fixação por extrusão (10) para máquinas de fabricação de salsicha possui três tubos concêntricos (12, 42, 45) com o tubo interno definindo uma primeira passagem (60), o espaço entre o interno (12) e tubos intermediários (42) compreendendo uma segunda passagem (62), e o espaço entre o tubo externo (54) e o tubo intermediário (42) definindo uma terceira passagem (83). O diâmetro do tubo interno (12) é pequeno de forma que a emulsão de carne (70A e 70B) que passa dentro do tubo interno (12) seja submetido a uma pressão mais alta do que a da pressão na segunda passagem (62). O material de carne de pressão mais baixa na segunda passagem (62) é revestido finamente no cordão do material de carne de alta pressão extrudado a partir do tubo interno (12). Uma camada fina de material de colágeno (72) é extrudado a partir da terceira passagem (83) para depósito na superfície externa da camada de carne extrudada a partir da segunda passagem (62). Uma fixação por extrusão alternativa (84) possui apenas dois tubos concêntricos como definido acima com um envoltório oco alongado na superfície externa dos dois tubos adaptados para receber um cordão co-extrudado e salsicha.
