"PROCESSO PARA PREPARAR UM PRODUTO à BASE DE VEGETAL OU FRUTA E PRODUTO à BASE DE VEGETAL OU FRUTA". Um processo para preparar um produto à base de vegetal ou fruta compreendendo: adicionar pectina e pectina metil esterase a uma pasta de vegetal ou fruta, que não é sensível à pectina metil esterase; incubar a pasta com a pectina e pectina metil esterase; e opcionalmente inativar a pectina metil esterase.
