Abstract
<B>"PROCESSO PARA A PRODUçãO DE LEITE UHT"<D>. A divulgação está relacionada a processo para produzir leite UHT com qualidades de sabor melhoradas. O processo inclui um pretratamento do leite por meio de separação e padronização, e ainda homogeneização e tratamento por calor. O tratamento se processa em temperaturas que excedem 135°C. O processo inclui ainda a desativação de enzimas, em um ou mais estágios. O leite é mantido então em células de retenção a uma temperatura de 55-70°C por um período de tempo de 2-10 minutos. A desativação das enzimas é levada a efeito após o tratamento por calor ou, de modo alternativo, antes do tratamento por calor.<B> "PROCESS FOR THE PRODUCTION OF UHT MILK" <D>.
