Abstract

"PROCESSO DE PREPARAçãO DE MASSA DE RECHEIO PARA AZEITONAS". Trata-se de um processo de preparação de massa de recheio para azeitonas, em que a massa é preparada a partir de um produto básico de recheio combinado com alginato e água nas proporções adequadas, e triturado inteiramente até a obtenção de uma massa homogênea, com a intervenção, caso necessário, de um espessante, dito processo compreendendo a intervenção ainda, na mistura de preparação da massa de recheio, de outros componentes, tais como ácido cítrico, ácido lático, proteinas e um saborizante, tudo isto sendo submetido a trituração conjunta em um agitador durante um tempo de 15 a 80 segundos, em função tanto dos componentes da mistura como da própria velocidade de agitação.
