Abstract

"PROCESSO PARA PRODUZIR UM AGENTE DE CONDIMENTAçãO DE ALIMENTO". A invenção refere-se à produção de um agente de codimentação de alimento. Mais particularmente, a invenção fornece um processo para a produção de um agente de condimentação de alimento, cujo processo compreende os estágios de preparação de uma suspensão aquosa de proteína de planta e de material de planta insolúvel, tratar a suspensão com uma protease para hidrolisar a proteína, maturação, <MU>caracterizado<MV> pelo fato de que não é efetuada separação do material insolúvel entre os primeiro dois estágios. Por este processo, o sabor de um hidrolisado de proteína de planta pode ser intensificado e aperfeiçoado.
