Abstract

"MéTODO PARA PRODUçãO DE CRISTAIS DE TAGATOSE". A presente invenção refere-se a um método para produção de cristais de tagatose a partir de um sistema aquoso sem usar solvente orgânico. Nesse método, germes cristalinos de tagatose são adicionados a uma solução de tagatose em que a pureza de tagatose de teores de sólidos na solução é de pelo menos 70% e a concentração de teores de sólidos na solução é de 60 a 98% em massa, e cristalização de tagatose é realizada através de agitação e resfriamento da solução enquanto se mantém um grau de supersaturação de tagatose a 1,25 ou menos. Prefere-se que a solução que contém tagatose seja uma solução que não contém solvente orgânico. é adicionalmente preferido que uma parte de massecuite para a qual a cristalização é completada seja adicionada a um licor-mãe a fim de produzir os cristais de tagatose semi-contínua ou continuamente. é além disso preferido que os cristais de tagatose formados da massecuite sejam separados através de centrifugação ou filtração e secos para obter cristais de tagatose.
