Abstract
"HIDRóLISE FOSFóRICA DE AMIDOS". Compreendendo o processo aplicável nas indústrias alimentícia ou médico-farmacêutica ou química para a hidrólise fosfórica de amidos ou féculas ou cultivares tuberosos ou cereais ricos em amiláceos, enquanto altemativa à hidrólise clorídrica convencional, o qual é executado usando como catalisador o ácido fosfórico diluído entre pH 5,0-1,0 ou mais concentrado, mediante simples aquecimento ou aquecimento sob pressão, ou termopressurização, durante tempos variáveis de residência no reator, a partir de soluções ou suspensões diluídas ou concentradas destes materiais amiláceos, com o objetivo de produzir soluções ou xaropes enriquecidos em glucose e/ou maltose e/ou maltossacarídios com grau de polimerização acima de 3 e/ou maltodextrinas (1-A e 1-B; 2-A a 2-H), mantendo ou não o catalisador como tal ou neutralizado em ditos produtos, os quais, comparativamente à hidrólise clorídrica, exploradas as condições cinéticas de pH, temperatura e tempo de reação, vêm acompanhados de menor teor de subprodutos coloridos (4-A e 4-B) ou incolores, insípidos ou não, como hidroximetilfurfural (3-A a 3-C) e/ou subprodutos, similares ou não, oriundos da desidratação ou condensação de açúcares liberados do amido ou de outros carboidratos contaminantes, e mesmo de proteínas ou lipídios residuais, caso este quando féculas menos purificadas são hidrolisadas."PHOSPHORIC HYDROLYSIS OF STARCHES".
