Abstract

The product to be frozen is placed in a sealed drum and is placed under partial vacuum. Liquefied gas is then sprayed into the drum and evaporates so as to cool rapidly the product in the drum. After a given time, the refrigerant gas is exhausted from the drum and passes to a compressor from which the again liquefied gas may be re-cycled for a further freezing operation.
