Abstract

The invention relates to micro-organisms that have the ability to quickly metabolise N-acetyl glucosamine in the presence of N-acetyl mannosamine and also relates to a biotechnological method for producing NAM, starting from a mixture of NAM and NAG, using said micro-organisms.
