(Q Sandercock Cowie 2002-03-15S,A: \77colvik.conmpletc. wpd, I -2- BACKGROUND OF THE INVENTION Dietary and medical studies have traced several health problems to reactions by the body to various ingredients in the diet and many adults and children are aware that they must avoid foods containing ingredients which upset them. Governments try to assist by legislating for informative labelling but people continue to be affected because foods, both processed and unprocessed, are mixed with or contain offending foods.
:i Persons particularly affected are those experiencing asthma, dermatitis, diabetics, coeliac disease and Attention Deficit Hyperactivity Disorder. Other persons with non-specific high intolerance to certain food products are also a substantial group. Simple intolerance to specific substances such as wheat, gluten and lactose are somewhat easier to manage in that supermarkets sell bakery products which labelling shows are free from the offending substances.

The only solution is to forego such products or to seek expensive cuts of meat. Suitable foods for sufferers therefore remain largely inaccessible.

o Sandercock Cowie 2002-03.15 A:3colvik.omplet.wad,2 -3- SUMMARY OF THE INVENTION This invention provides a meat mix for meat based foods comprising carcase meat, flavouring and a starch binder devoid of wheat flour and gluten. The lean meat may be ordinary butchers cuts of sheep, beef, deer, goat and poultry. It may be minced, ground or otherwise prepared for making a mouldable batch. The starch binder may be rice flour or soya flour.
The flavourings may be fresh or dried vegetables appropriately chopped or comminuted.
10 Conventional herbs are convenient and safe to use.
Sufficient water is used to plasticise the mix. The ratios of meat to binder will accord with those stipulated by the food regulations. These vary from country to country but for practical purposes the binder can be 5-8% of the total, whereas the flavouring may be 7- 15 Salt is a conventional ingredient in meat mixes. The mix preferably contains mined salt instead of sea salt. Salt content does not produce reaction in the consumers for whom these meat mixes are intended. Clearly excessive salt is to be avoided by consumers with kidney complaints but they check food salt content routinely.
The mix may be batched conventionally and formed into sausages, sausage mince, rissoles, meat loaves, hamburgers, meatballs and sausage roll filling.

Sandercock Cowie 2002-03-15,A:377colvik.completc.wpd,3 -4- The mix may form the filling of pastry products such as pies and sausage rolls which pastry is similarly composed of wheat and gluten free flours, for example soy or rye flour.
The meat mix described above is tolerated by allergic consumers because it is devoid of:- Nitrites; Sulphite and other oxidising agents used as bactericides; Benzoates; 10 Monosodium glutamate; Dairy products, especially lactose; Sucrose; and Artificial colouring agents, especially Tartrazine 102.
15 Example 1 A lamb carcase is boned and the offal and fat discarded. The meat is minced and 11.25kg are transferred to a mixer. 1.5kg of rice flour is added together with 60g chopped garlic and 250g of chopped leek and 2.5kg iced water to make the mix yeildable. The batch is fed into an extruder and expelled allowing it to be formed into hamburger patties.

Sandercock Cowie 2002-03-1,A:\377colvik.complete.wpd,4 is prepared as follows:- 12kg skinless chicken is minced and transferred to a mixer. 1.1kg of rice flour and 14g mineral salt, together with 1.1kg chopped leek and 200g chopped garlic are mixed with the minced chicken and plasticised with 200g iced water.
Example 3 A variant of the above for the same ADHD condition utilises 11.5kg of beef and lamb 10 pieces; 1.1kg rice flour; 14g minimal salt; 1.1kg chopped leek; 60g chopped garlic.
These are plasticised with 2.5kg iced water. Beef and lamb have a lower water content than chicken.
Example 4 The same procedure for Example 1 is followed and in addition to the leek and garlic, 250g of a vegetable selected from the following list is used:- Potatoes (large white or dirty brown) Choko Swede Brussel sprouts Cabbage Celery Copyright. All rights reserved.

Claims (9)

1. A meat mix for meat based foods consisting of carcass meat, flavouring, water and starch binder devoid of wheat flour and gluten.
2. A meat mix as claimed in Claim 1, wherein the carcass meat is from butchers cuts excluding offal and fat.
3. A meat mix as claimed in Claims 1 or 2, wherein the starch binder is rice flour, :10 rye flour or soya flour. .o
4. A meat mix as claimed in any one of Claims 1 to 3, wherein the flavouring is supplied in the form of fresh or dried chopped vegetables. 15
5. A meat mix as claimed in any one of Claims 1 to 4, wherein the binder is 5-8% by weight of the total.
6. A meat mix as claimed in any one of Claims 1 to 5, wherein the flavouring is 7- by weight of the total.
7. A meat mix substantially as herein described with reference to any one of the examples.
