Abstract

La presente invención se refiere a cepas progenie de levaduras con la característica útil de producir niveles bajos de diacetilo durante la fermentación. Dichas cepas progenie de levaduras pueden ser de la especie Saccharomyces cerevisiae. También se proporcionan métodos para producir estas cepas progenie de levaduras, métodos para producir una bebida a base de malta y/o cereal con estas cepas, así como bebidas producidas mediante este método. Reivindicación 1: Una cepa progenie de levadura, en donde dicha cepa progenie de levadura es la progenie de una primera cepa de levadura parental y una segunda cepa de levadura parental, en donde la primera cepa de levadura parental es de la especie Saccharomyces cerevisiae; y dicha primera cepa de levadura parental a) es M49 como está depositada en la DSMZ con el número de acceso DSM 34496; y/o b) porta una mutación en un gen que codifica ILV2, en donde ILV2 es como se detalla en la SEQ ID Nº 1 o un homólogo funcional de la SEQ ID Nº 1 con al menos 90%, tal como al menos 95%, tal como al menos 98% de identidad de secuencia con la SEQ ID Nº 1, en donde dicha mutación da por resultado una sustitución de aminoácido en la posición 498 de la SEQ ID Nº 1 o una sustitución de aminoácido en la posición correspondiente de dicho homólogo funcional de la misma, en donde dicha primera cepa de levadura parental y dicha cepa progenie de levadura son capaces cada una de producir una solución de ensayo fermentada tras incubación en una solución de ensayo, en donde la solución de ensayo es un extracto de malta y/o cereal, y en donde dicha solución de ensayo fermentada no alcanza un nivel de diacetilo total superior a 50 ppb, tal como superior a 40 ppb, o tal como superior a 30 ppb en ningún momento durante la fermentación. Reivindicación 35: Un método de producción de una cepa progenie de levadura, en donde dicho método comprende las etapas de: Proporcionar esporas de la primera cepa de levadura parental, en donde dicha primera cepa de levadura parental es como se define en una cualquiera de las reivindicaciones precedentes, Cruzar dicha espora con esporas de una segunda cepa de levadura parental, en donde al menos una espora de la primera cepa de levadura parental tiene un tipo de cruzamiento diferente de al menos una espora de la segunda cepa de levadura parental.
