Abstract
Una nanoemulsión comestible de aceite de chía, rica en omega-3, con alta estabilidad física y oxidativa, alta bioaccesibilidad de los ácidos grasos omega-3 y los métodos de preparación. Edible formulations comprising nanoemulsions of chia oil and, in particular, transparent beverages and desserts, such as juices and jellies, which comprise them are also disclosed.
