Abstract

Un procedimiento enzimático para la producción de aceite inferior saturado, aceites palmíticos inferiores de fuentes de triacilglicerol. Las enzimas usadas en el procedimiento de la presente son enzimas saturasa, incluso enzimas palmitasa. Los aceites producidos por el procedimiento de la presente se usan en productos alimenticios. Reivindicación 1: Un proceso para la producción de una composición de aceite de baja saturación que comprende a) mezclar una fuente de triacilglicerol con una solución acuosa de una enzima saturasa en presencia de un emulsionante para obtener una emulsión, donde el triacilglicerol comprende al menos un residuo de ácido graso saturado y al menos un residuo de ácido graso insaturado, y el emulsionante comprende una sal alcalina de un ácido graso insaturado, b) mezclar un ácido acuoso con la emulsión para obtener una mezcla, donde el ácido está en una cantidad suficiente para convertir el emulsionante en un ácido graso insaturado libre y una sal, y c) separar la mezcla para obtener un aceite y una fase acuosa, donde el aceite comprende la composición del aceite de baja saturación.
