Abstract
Un método para reducir la aflatoxina en un gluten de grano o gluten de maíz, comprendiendo el método los pasos de: (a) preparar una suspensión de gluten de grano o de gluten de maíz; ya (b) tratar la suspensión de gluten de grano o de gluten de maíz con ozono en donde la temperatura de la suspensión de gluten de grano o de gluten de maíz en el paso (b) es desde aproximadamente 10 a aproximadamente 60ºC.
