Abstract

Un proceso para producir un producto con contenido de glicéridos que está enriquecido en ácidos grasos monoinsaturados en relacion con el glicérido de partida que comprende los pasos de: (a) alcoholisis de los triglicéridos con enzimas lipolíticas selectivas para ácidos grasos saturados y/o enzimas lipolíticas selectivas para la posicion 1, la posicion 3 o ambas posiciones en un glicérido; y (b) separacion de la fraccion A que está enriquecida en ésteres de ácidos grasos saturados de la fraccion B que está enriquecida en glicéridos monoinsaturados.
