Abstract

Procedimiento e instalacion para el control de la evolucion de una bebida alcoholica, embotellada y cerrada con un tapon, aplicable a una bebida alcoholica comprendiendo vino y bebidas espirituosas, consistiendo en controlar un ambiente circundante de una botella o botellas que contiene dicha bebida, aplicando una presion que sigue un determinado perfil de valores en el tiempo, de un valor igual, superior o inferior a la presion atmosférica, induciendo con ello una interaccion entre el ambiente circundante y el interior de la botella. También se utiliza una instalacion que comprende un recinto estanco apto para el almacenamiento de unas botellas de bebida alcoholica, cerrada con tapones y un sistema de control de la presion y de la composicion de la atmosfera en el entorno de las botellas en dicho recinto estanco.
