Hornillo para coccion de alimentos constituido por una parte inferior o base (10) y una tapa acampanada (20), cuyos bordes enfrentados (13) y (22) forman un cierre perimetral por contacto. La base (10) comprende una pared inferior (11) que tiene una pared periférica (12) y una abertura central (14) que tiene a su vez una falda tubular perimetral (15) proyectada hacia adentro que soporta un difusor (30) que está enfrentado a la abertura central (14) de la pared inferior (11) y provee separadores (32) para apoyo de al menos una placa refractaria (40) que tiene menor diámetro que la pared periférica (12) de la base definiendo un pasaje anular (PA) constituyendo dicha placa un medio de soporte directo de los alimentos y selectivamente de otras piezas de soporte seleccionadas entre una rejilla (50) y una fuente o bandeja (60). La abertura (14) esta prevista para ser enfrentada a la llama de una hornalla u otra fuente de calor, quedando delimitada entre el difusor (30) y la placa refractaria (40) una cámara de gestion de calor (CGC) que está comunicada a través del pasaje anular (PA) con la cámara de coccion (CC) de los alimentos que está definida por sobre la placa (40).
