Abstract

Una barra salada con buenas propiedades organolépticas. En una realizacion, la barra incluye un aglutinante que comprende i) al menos 40% del peso o más de solidos, en base a los solidos totales en el aglutinante, de uno o más ingredientes fibrosos y ii) al menos 1% del peso de un compuesto que incluye glicerol y/o partes de ácido graso. La barra alimenticia de acuerdo con la invencion puede incluir, por ejemplo, entre 0,5 y 40% del peso del aglutinante. En una realizacion preferida, el compuesto fibroso comprende dextrina, con mayor preferencia dextrina de trigo. La cantidad de solidos de azucares presentes en la barra total se limita típicamente a no más del 10% del peso de solidos de azucares, en especial no más del 5% del peso. De acjuerdo con otra realizacion de la invencion, la barra alimenticia salada comprende un algutinante que incluye uno o más ingredientes fibrosos que tienen menos del 70% de enlaces 1,4 glucosídicos, más del 15% de enlaces 1,6 glucosídicos, en especial entre 25% y 50% al menos 5% cada uno de enlaces 1,2 glucosídicos y enlaces 1,3 glucosídicos, y el aglutinante incluye no más del 5% del peso de solidos mono- y disacáridos. La invencion también se refiere al algutinante y a los procedimientos para preparar el aglutinante y las barras alimenticias.
