Abstract

La presente proporciona un polinucleótido de fitasa sintético que es optimizado para la expresión en plantas, y que codifica a fitasa tolerante a las variaciones de temperatura, como así también enzima fitasa tolerante a las variaciones de temperatura aislada. Además se proporcionan alimentación o productos alimenticios que comprenden una fitasa tolerante a las variaciones de temperatura, y plantas transgénicas que expresan a la fitasa tolerante a las variaciones de temperatura. Se proporciona también métodos para la elaboración y uso de las fitasas tolerantes a las variaciones de temperatura, por ejemplo, un método de uso de un fitasa tolerante a las variaciones de temperatura en el procesamiento de alimentaciones o de alimentos. Reivindicación 1: Un método para la preparación de una fitasa tolerante a las variaciones de temperatura, que comprende: expresar en una célula de planta un cassette de expresión que comprende un promotor funcionalmente ligado a una molécula de ácido nucleico que codifica una fitasa tolerante a las variaciones de temperatura que retiene por lo menos 40% de actividad después de 30 minutos a 60°C y que tiene una actividad específica superior a 200 U/mg a pH 4,5 y a 37°C.
