Abstract

La presente se refiere al uso de una carboximetilcelulosa (CMC) en productos cárnicos procesados, como embutido de hígado, salchicha de Viena, chorizo, hamburguesas y jamón, donde la CMC se caracteriza por formar un gel a 25°C luego de una disolución de alto esfuerzo cortante en una solución acuosa de cloruro de sodio al 0,3% en peso, siendo el contenido final de la CMC en la solución acuosa de cloruro de sodio del 1% en peso para una CMC que tiene un grado de polimerización (GP) de > 4.000; 1,5% en peso para una CMC que tiene un GP de > 3.000 - 4.000; 2% en peso para una CMC que tiene un GP de 1.500 - 3.000; y 4% en peso para una CMC que tiene un GP de < 1.500, donde el gel es un líquido que tiene un módulo de almacenamiento (G) que excede el módulo de pérdida (G'') en toda la región de frecuencias de 0,01 - 10 Hz al medirla en un reómetro oscilatorio que opera con una tensión de 0,2. De preferencia, el producto cárnico procesado comprende carne vacuna, porcina o de aves de corral. La CMC también puede usarse en combinación con hidrocoloides como carragenina, proteína colagenosa, Konjac o almidón.
