Abstract
Se describe un método para preparar tiras delgadas y rodajas de papas fritas con un contenido reducido de grasa, en donde papas pre-peladas se cortanen rebanadas delgadas y las rebanadas delgadas son tratadas con vapor sobrecalentado,revestidas con una emulsión, tostadas, secadas y despuésenfriadas. La invención también se refiere a las tiras delgadas y rodajas de de papas fritas con un contenido reducido de grasa obtenidas llevando a cabo elmétodo de la presente invención.
