Abstract

Un producto nutricional para disminuir los niveles de colesterol en suero en humanos. El producto nutricional es un sólido que comprende grasa,carbohidrato, y proteína caracterizado porque dicho producto nutricional tiene disperso en el mismopart ículas de por lo menos una fibra dietaria encapsuladaen zeína. El producto nutricional comprende una fuente de grasa seleccionada a partir del grupo consistente en aceites vegetales que contienen, en peso,menos de 25% de ácidos grasossaturados; una fuente de proteína seleccionada a partir del grupo que consiste en proteína de soja, proteína de avena ycaseinato de calcio; y en donde la fibra dietaria es guar y dicho guar está encapsulado en zeína.
