Abstract
Utilizacion de bacterias lácticas para la preparacion de una crema destinada a banar toda o una parte de un helado de crema. Este helado comprendeuna crema expandida y helada que tiene en toda o en una parte de su superficie exterior, unba no no expandido y este bano comprende de 10 (3) a 10(9) CFU/gde bacterias lácticas. De preferencia, la crema expandida comprende más de 10(6) CFU/g de bacterias lácticas, siendo la razon (e/g) entre la cantidad debacterias lácticas del bano(e) y la cantidad de bacterias lácticas de la crema expandida (g) mayor que 1. El bano puede comprender de un 1 a un 70% de lechefermentada por bacterias lácticas, un 0,5% a un 5% de proteínas animales o vegetales, una proporcion de materiagrasa lá ctica de un 2% a un 20% y depreferencia la cepa Lactobacillus acidophilus CNCM I-1225.
