The enclosure is located on top of a main guide (24) or a secondary guide (36) of a translation system (20 = by which the meat unit is moved on rolling hooks (334) and the method that includes filling the enclosure with steam, direct the gas at high speed to the meat unit to remove surface moisture as the meat passes into the transport device; the meat rises within the enclosure; the surface of the meat within the enclosure is quickly heated using steam or a vapor-air mixture; and the meat unit is lowered from the room while a cooling medium is applied to the meat surface.
