Abstract
Polipéptidos que tiene actividad de mutanasa caracterizado porque a) tiene un pH óptimo de alrededor 3,5 a alrededor de 4.0 a 40°C; b) tiene unatemperatura óptima a lo largo del rango de 50°C a 55°C a pH 5,5 y c) (i) es codificado por una secuencia de ácido nucleico obtenida a partir de Penicilliumpurpurogenum que tiene capacidad para hibridizarse en condiciones poco rigurosas, con la secuencia de ácido nucleico de SEC ID:NO:2 o su cadenacomplementaria ; o (II) que tiene una secuencia de aminoácidos que tiene por lo menos 60% de identidad con la secuencia de aminoácidos expuesta en SEC ID NO:3.La presente invención también se refiere a secuencias de ácido nucleicos que codifican los polipéptidos, construcciones de ácidos nucleicos, vectores, ycélulas huésped que comprenden las secuencias de ácido nucleico así como con métodos para producir los polipéptidos. Se relaciona también con composicionesy métodos para degradar mutano en una cavidad bucal.
