Abstract

Proceso para la manufactura de fideos, en el cual se prepara una mezcla de sémola o harina de cereal y agua en una amasadora de tornillos gemelos, lamezcla es convertida en una cinta de pasta para lo cual se la presiona obligándola a pasara través de una matriz provista con un orificio de salidaoblongo, la cinta es laminada y es cortada en forma de fideos.
