Abstract
Det blir fremskaffet anvendelsen av et kationtverrbun- det polysakkaridbelegg for reduksjon av en glycemisk respons til et karbohydratinneholdende næringsmiddel. Det katlontverrbundne polysakkaridbelegget kan være i form av kalsiumtverrbundet pektin eller pektitan. Det karbohydratinneholdende næringsmidlet kan være et rlskorn, pastaform, mel, stivelse eller en del av en sereal frokostblanding. Et slikt belagt næringsmiddel kan bli fremstilt ved belegging av et tverrbindbart polysakkarid på en hydrerbar karbohydratinneholdende næringsmiddelkjerne. Næringsmlddelkjernen blir så hydrert ved koking av den belagte næringsmlddelkjernen l en vandig oppløsning av tverrbindende kationer som samtidig tverrbinder belegget. De resulterende næringsmidlene kan bli benyttet l dietter til individer som lider av diabetes, hypoglycemi eller glykogen lagringssykdom.
