Abstract

In the food industry and in fermentation processes, interfering foams occur at various stages of processing or production. These foams have to be controlled or prevented. Described are reaction mixtures containing ester polyols, the reaction mixtures being produced by a ring-opening reaction between epoxidized carboxylic-acid esters and carboxylic acids and/or alcohols. The reaction mixtures are used as foam-inhibitors in the processing and/or production of foods, as well as in fermentation processes.
