Abstract
Bakterielt a-amylase-enzym som er stabilt ved middels høye temperaturer og som har en optimal Phadebas-aktivitet på over 100% ved en temperatur på ca. 65 til 72 "C ved en pH på ca. 5,5 til 6,5 og som bibeholder mindre enn 50% av Phadebas-aktiviteten ved temperaturer på over ca. 75C forsinker aldringen av bakte produkter når det inkorporeres i ingrediensene som anvendes for fremstilling av de bakte produkter, uten å forårsake seighet eller på negativ måte å ha innflytelse på de bakte produkters organoleptiske kjennetegn. Tilsetning av et syrestabilt o-amylase-enzym med en optimal aktivitet ved en pH på ca.,0 til 5,0 ved en temperatur på ca.0 til 75-C til deigen med det mellomtemperaturstabile a-amylase-enzym tilveiebringer synergis-tiske resultater ved fremstilling av bakeriprodukter ved at antallet aktive enheter som er nødvendige reduseres og mot-standen mot aldring økes.
