Teneinde deze retrogradatieverschijnselen tegen te gaan kan men uitgaan van zetmeelsoorten die geen amylose bevatten, de zogenaamde amylopectinezetmeelsoorten. Men kan als uitgangsmateriaal ook zetmeelesters of -ethers toepassen, die door invoering van substituenten in de amylosemoleculen minder neiging vertonen tot retrogradatie. Verder kan men aan het zetmeel bepaalde additieven toevoegen die de viscostabiliteit van de zetmeeloplossingen verhogen. Het op geschikte wijze modificeren van zetmeel is echter omslachtig, terwijl de toevoeging van additieven zetmeeloplossingen met een meer complexe samenstelling oplevert.
