WERKWIJZE VOOR HET VERWERKEN VAN MOSSELEN EN VERPAKKING MET MOSSELENMETHOD FOR PROCESSING MUSSELS AND PACKING WITH MUSSELS
In de huidige praktijk worden mosselen of andere schaal- en schelpdieren na het opvissen gespoeld en opgeslagen gedurende een periode van bijvoorbeeld maximaal 24 uur. Hierbij wordt voortdurend vers zout water toegevoerd waardoor zand en andere verontreinigingen verwijderd worden. Na het machinaal uit elkaar halen van de mosselen en het verwijderen van de zogenoemde byssusdraden, waarbij de mosselen verzwakt raken, worden ze op een leesband verder gereinigd en op grootte gesorteerd. Hierna worden ze veelal in hoeveelheden tot 25 kilogram in jute zakken verpakt, of in plastic zakken in hoeveelheden van 1 tot 3 kilogram, waarbij deze plastic zakken zijn geperforeerd voor het toelaten van lucht voor de stofwisseling van de mosselen. Door hierna onmiddellijk de mosselen in gekoelde toestand in gesloten plastic onder vacuüm en/of in krimpfolie te verpakken, wordt voorkomen dat de mosselen binnen korte tijd niet meer eetbaar zijn.
