Abstract

Aspartylaminoacid esters are prepd. by reacting N-carbobenzoxyaspartic acid anhydride with an amino-acid ester salt in an inert polar solvent while adding an amount of base at least equivalent to the ester, isolating the N-carbobenzoxy-alpha- and/or beta-aspartylaminoacid ester and removing the protecting gp. Compared with the known method, this gives higher yields, suppresses the formation of diketopiperzines and gives products of high optical purity. The products are useful as sweeteners in foods, drinks and pharmaceuticals.
