Abstract

En la presente invencion se describe un procedimiento de preparacion de derivados de ??-caroteno tales como cantaxantina y astaxantina. El procedimiento utiliza un sistema in situ para generar acido hipobromoso como agente oxidante usando sales de sulfito, sulfito de hidrogeno o bisulfito en combinacion con una sal de bromato. Astaxantina y cantaxantina son obtenidas en buenos rendimientos con una reduccion significativa en el tiempo de reaccion.
