Abstract

Las enzimas novedosas termoestables y ácido estables tiene actividada-1,4 hidrolítica y una actividad 1, 6 hidrolítica que se deriva de las especies del género Sulfolobus. Estas enzimas son capaces de expresar altos niveles de actividad a-1, 4 hidrolítica, incluyendo la actividad máxima a-1, 4 hidrolítica de las mismas, a phs altamente ácidos de entre aproiximadamente 2.5 y aproximadamente 4.5. Estas a-amilasas son capaces ademas de expresar altos niveles de actividad a-1, 4 hidrolítica, incluyendo la actividad máxima a-1, 4 hidrolítica de las mismas, a temperaturas elevadas de entre aproximadamente 90 degree C y aproximadamente 120 degree C. En la presente, se exponen particularmente tales enzimas que se derivan de cepas de las especies S. acidocaldarius y en particular, Sulfolobus acidocaldarius DSM 639. Los procesos de degradacion de almidon modificados (licuacion y sacarificacion) que utilizan estas enzimas novedosas también son expuestos en la presente.
