Abstract

La presente invencion se refiere a un método para estabilizar el sabor de una bebida de malta fermentada, en forma más particular una cerveza, por la adicion de una enzima de oxoaldehído reductasa, la bebida de malta fermentada preparada por este método, y al uso durante el proceso de fermentacion de enzimas de oxoaldehído reductasa a partir de fuentes naturales, que incluyen aquellas producidas por levaduras, para estabilizar el sabor del producto de cerveza resultante y para producir una cerveza que tiene un sabor estable. La invencion también se refiere a microorganismos, particularmente levaduras, que se han modificado específicamente, se han seleccionado, o se han manejado genéticamente para expresar o segregar una enzima de oxoaldehído reductasa que se puede usar durante el proceso de fermentacion, para estabilizar el sabor del producto de cerveza resultante, y para producir una cerveza que tiene un sabor estable.
