Abstract
La invención se relaciona con un proceso para tratar una composición que contiene proteínas. El proceso incluye la provisión de una composición que contiene proteínas en donde las proteínas comprenden proteínas de la leche y dichas proteínas de la leche comprenden al menos 90 % en peso de ß-lactoglobulinas. La composición se pone en contacto con una transglutaminasa para obtener una composición que contiene proteínas reticuladas. Este proceso mejora no solo la termoestabilidad, en particular en presencia de calcio, sino también las propiedades de textura de tales composiciones que contienen proteínas. La invención también se relaciona con composiciones que contienen proteínas reticuladas que pueden obtenerse o se obtienen mediante dicho proceso, con un proceso para preparar productos lácteos o alternativas de estos con tales composiciones y con los productos lácteos o alternativas de estos resultantes.
