Abstract

La invención se refiere a un método para la producción de un producto de proteína fibroso deformado (12) a partir de un material del producto texturizado húmedo (11). El material del producto texturizado húmedo (11) comprende por lo menos el 10 por ciento en peso de las proteínas que poseen una estructura fibrosa y por lo menos el 35 por ciento en peso de agua. El producto de proteína fibroso deformado (12) en particular se selecciona a partir del grupo que consiste en un producto deformado (12a), un producto desgarrado inicial (12b), un producto en bloque (12c) y un producto desgarrado final (12d). El método comprende el paso de a) la deformación de una manera elástica y plástica del material del producto texturizado húmedo (11), con lo que se cambia de esta forma la estructura fibrosa para obtener el producto deformado (12a).
