Abstract
A fin de permitir el efecto gelificante de las pectinas también para las llamadas aplicaciones de "etiqueta limpia" y para proceder de la manera más económica y eficiente en cuanto a recursos, la invención proporciona un método con los siguientes pasos a)proporcionar una masa de frutas y/o de frutas aplastadas sin su cáscara, semillas o tallos; b)retener el calor de la composición calentada a una temperatura por encima de 75 °C; preferentemente por encima de 80 °C, en particular preferentemente en el intervalo entre 94 °C y 96 °C, durante un período en el intervalo entre 45 minutos y 180 minutos, preferentemente en el intervalo entre 50 minutos y 150 minutos, en particular preferentemente en el intervalo entre 60 minutos y 120 minutos.
