Abstract

La invención se relaciona con un proceso de fabricación para la producción de un polvo de fibra lipídica. Particularmente, la invención se relaciona con un proceso para la producción un polvo de fibra lipídica que tiene entre 40 a 78 % en peso de aceite o grasa (en peso del total de polvo de fibra lipídica) y 22 a 60 % en peso de una fibra vegetal (en peso del total de polvo de fibra lipídica), en donde la fibra se caracteriza por tener una velocidad de hidratación entre 15 a 500 cP/min y en donde el aceite o grasa tiene un contenido de grasa sólida (SFC) a 20 °C menor que 12 % en peso.
