Abstract
El presente documento divulga un método para producir un sustituto de polisacárido no almidonado microencapsulado para harina. El método comprende: (i) dispersar un almidón de grado alimenticio en un medio a una concentración desde el rango de aproximadamente 2% a aproximadamente 50% en peso para formar una dispersión de almidón de grado alimenticio; (ii) mezclar la dispersión de almidón de grado alimenticio con partículas de polisacárido no almidonado de forma tal que el almidón de grado alimenticio microencapsula las partículas de polisacárido no almidonado para formar partículas de polisacárido no almidonado microencapsulado; y (iii) secar las partículas de polisacárido no almidonado microencapsulado. Las partículas de polisacárido no almidonado microencapsulado se pueden usar como un reemplazo (o un reemplazo parcial) para harina para aumentar el contenido de fibra al mismo tiempo que reduce la disponibilidad calórica de productos alimenticios horneados, pastas y similares.
