Abstract

Un método para producir una bebida carbonatada que comprende una mezcla de agua y jarabe que tiene un nivel de carbonatación final predeterminado. El método incluye las etapas de: introducir CO2 en una corriente que fluye de una mezcla del producto que comprende agua, jarabe y oxígeno disuelto, tal que se disuelve CO2 en la mezcla del producto; retirar el aire de la mezcla del producto que contiene CO2 al introducir la mezcla en un recipiente atmosférico ventilado, el interior del cual está a presión ambiente con un espacio de cabeza mantenido por arriba de la superficie del líquido dentro del recipiente, mediante lo cual el oxígeno disuelto se libera de la mezcla del producto y se ventila del recipiente; bombear la mezcla del producto retirada de aire del recipiente, en donde la mezcla retirada de aire incluye CO2 disuelto en un nivel de carbonatación intermedio menor que el nivel de carbonatación final; y carbonatar la mezcla del producto retirada de aire al nivel de carbonatación final corriente abajo del recipiente ventilado para producir una bebida carbonatada para envasado subsecuente. También se proporciona un sistema para realizar el método, así como un método para producir una bebida utilizando el retiro de aire con nitrógeno.
