Abstract

La invención se refiere a un método para calentar un concentrado (K) en una instalación para el secado por pulverización (100) de acuerdo al preámbulo de la reivindicación 1 y a una instalación (100) para llevar a cabo el método. El método y la instalación para llevarlo a cabo deberán con un incremento económico del rendimiento cuantitativo de la torre de secado disminuir la tendencia a la desnaturalización del concentrado y los depósitos de este, y al mismo tiempo asegurar un producto final microbiológico impecable. Esto se logra con un método que se caracteriza entre otras cosas por la secuencia de las etapas (b) y (c) siguientes: (b) calentamiento a alta presión (H) del concentrado (K) en el nivel de alta presión (p2) a una temperatura de pulverización más alta (T3), la cual se encuentra en el intervalo de 75 a 80°C, por medio de un intercambiador de calor de alta presión (18) sobre cuyo lado secundario incide un medio portador térmico (W) y el cual se configura como intercambiador de calor de haz de tubos con una pluralidad de tubos interiores por los que el concentrado (K) fluye en paralelo, los cuales se encuentran dispuestos en forma de anillo circular y en un único círculo y en suma constituyen un canal interior, (c) someter al concentrado (K) a esfuerzos de corte definidos (S) durante el o directamente a continuación del tratamiento según la etapa (b) con medios, los cuales consisten en un canal con forma de espacio anular, el cual visto en la dirección de flujo se encuentra corriente abajo del canal interior y el cual tiene una longitud de extensión definida y un curso definido en función de la longitud de sus secciones transversales de paso de canal.
