Abstract
The present invention relates to the dairy industry, specifically to the milk processing industry to obtain delaminated or lactose-free milk and the use of the by-product by different means of separation of components such as Microfiltration, Ultrafiltration, Nanofiltration, and Reverse Osmosis equipment. The product obtained is lactose-free milk with a sensory profile equivalent to a normal pasteurized milk without lactose, using the essential steps of separation to lower production costs. Also, the present invention aims to determine the ratio between Retentate Ultrafiltration and Permeate Nanofiltration-Diafiltration to obtain a sensory profile equivalent to a normal pasteurized lactose-free milk.
