Abstract

En la presente descripción se proporcionan composiciones, métodos y usos relativos a la preparación de un producto lácteo fermentado que tiene un contenido proteico elevado tal como un yogur rico en proteínas, yogur griego, Labneh o crema agria, que comprende la aplicación de un microorganismo y una proteasa exógena a un sustrato lácteo que tiene un contenido proteico al menos igual o superior a un 6.5%. Se contempla la aplicación de proteasas de las clases EC 3.4.21 (serínendopeptidasas), EC 3.4.24 (metaloendopeptidasas) y EC 3.4.17 (metalocarboxipeptidasas ). Especialmente, la aplicación de la neutrasa (Protex 7L) y Protex 6L dio como resultado una reducción de la viscosidad y un buen sabor.
