Abstract

La invención se refiere a un proceso para el tratamiento de un material de suero de leche dulce que contiene cGMP (caseinoGlicoMacroPéptido), dicho proceso comprende las siguientes etapas: - Descationizar el material de suero de leche dulce para obtener un material de suero de leche dulce que tenga un valor de pH de 1 a 4.5; - Tratar el suero de leche dulce en un reactor de lecho fluidizado que comprende un volumen específico de una resina aniónica, a una temperatura entre 10 y 18 °C, en donde el suero de leche dulce entra en contacto con la resina por una duración de tiempo suficiente de manera que la resina absorba entre el 52 % y el 58 % del cGMP presente en el suero de leche dulce; y - recuperar un material proteico. Ventajosamente, el material proteico es adecuado para las fórmulas infantiles hipoalergénicas.
