Abstract

Se describe un proceso de secado por aspersión electrostática para encapsular un material de núcleo, tal como un aceite de sabor volátil, dentro de un portador o material de pared. Las temperaturas bajas de secado imparten mejorías en el producto en polvo encapsulado resultante, que incluyen mejor retención de componentes de sabor volátil, un perfil de sabor comparable al de la formulación líquida de inicio, y mejor hidratación y disolución en aplicaciones a base de agua.
